Ground black pepper
8 Liter water
1 Head of celery
1 Bay leaf
Boil all the brine ingredients in a pot, cool the mixture completely, then soak the turkey breast in the brine for 3 days, while turning it every day.
Wash the meat and dry it well, prepare a mix of olive oil and spices and spread it on the meat.
Bake for an hour and 15 minutes in an oven preheated to 140ºc.
